The product of our vineyards located on high hills, this Brut Rosè sparkling wine is a pure expression of the typicality of our territory.
The care we put into the vineyard is meticulous: we reduce the use of machinery and pesticides to a minimum, preferring manual work that respects the balance of the soil and favors the presence of wild microfauna.
We have developed a system for managing carbon dioxide during primary fermentation, which helps limit the oxidative effects of oxygen in the wine; by doing so, we are able to significantly reduce the addition of sulphites in the wine and allows us to certify this on the back label of our bottles.
In the cellar, once the grapes have been pressed, all the marc is recovered to be transformed into compost, which will become a beneficial organic bio-fertilizer for our vineyards.
The harvest is completely manual, ensuring that each bunch arrives at the cellar intact, ready for a delicate pressing that preserves the purity of the must.
On the palate it stands out for its freshness and flavour, with a fine and persistent perlage that enhances every sip.
Ideal as an aperitif or paired with fish dishes, this wine represents the elegance and refinement of the Asolo hills.
We wanted to imagine it in the glass with an extremely fine bubble.

We have condensed all our experience to obtain this Rosé that we want to share with you.

Grape variety: 100% red grapes
Production Area: High hills of Asolo, altitude from 200 to 250 m above sea level.
Land Characteristics: Our vineyards are located in the designated ASOLO DOCG area and are situated on the steepest slopes of the Asolo hills.
The Colli Asolani area features clayey soil on which mostly “calcareous marl” rests, that is, rocks sedimented over the centuries and mainly made up of limestone mixed with thinner clayey and pebbly material, called “sandstone rock”.
Tasting notes: Incredibly delicate pink color, promise of elegance.
The intense fruity composition is articulated in delicate nuances of small red fruits, peach and citrus fruits.
The floral note unfolds with an elegant note of jasmine.
Extremely elegant and balanced, the lively freshness accompanies the entire sip.
Its right flavour makes it lean and gives a generous taste/olfactory persistence.

Vinification: The grapes are selected and harvested by hand, pressed in a conditioned environment and subsequent fermentation of the must in steel.
Slow refermentation in autoclave for 40 days and subsequent bottling.
