The Product in Brief:
Viticulture in the Vicenza area has ancient roots.
Fossil remains of vines, discovered in Salcedo, testify to the presence of the vine since the Tertiary era.
A key moment for viticulture in the area dates back to the end of the 13th century, when the Bassano Wine Code established strict rules for the production and trade of wine.
Vespaiola is a historic vine, loved by the Venetians and praised as early as 1610 by Andrea Scotto for its quality.
Its name comes from the attraction that the sweet juice of the grape exerts on wasps.
After difficult periods, between phylloxera and world wars, the recovery of viticulture culminated in 1969 with the recognition of the DOC Breganze, which protects this iconic wine of the territory.
This Vespaiolo by Firmino Miotti is produced exclusively with Vespaiola grapes, grown on the volcanic hills of Santa Lucia in Breganze.
The harvest is done manually, carefully selecting the bunches, which are transported in 10 kg boxes.
This is followed by soft pressing and fermentation at a controlled temperature of 18°C.
The refinement takes place 60% in stainless steel with fine lees for approximately one month and 40% in acacia barriques, with bi-weekly bâtonnage until bottling.
The colour is intense straw yellow with green reflections.
On the nose, elegant floral notes of acacia and chamomile emerge, with spicy nuances of sweet tobacco and hints of passion fruit.
On the palate it is dry, full, with a light acidity that enhances its freshness and a good aromatic persistence.
It pairs perfectly with fish appetizers, such as swordfish carpaccio or oysters, but also with traditional Vicenza dishes such as asparagus Bassanese style and cod Vicenza style.
Also excellent with savory pies and creamed cod. Serve at a temperature of 10-12°C.
