The Product in Brief:
This CAJ rosé prosecco presents an excellent balance between the Glera grapes and the light structure given by the Pinot Noir, resulting in a creamy, persistent and savoury finish.
Perfect correspondence between smell and palate, the red fruit returns predominant in the mouth.
Separate vinification with soft pressing of the grapes, static decantation and fermentation at 18° C with selected yeasts for the Glera and red maceration for the Pinot Noir.
The blending of wines for the rosé base takes place before the second fermentation using the Martinotti method for 60 days.
