Fondo 53 Rosato naturally refermented sur lie
The Product in Brief:
Fondo 53 is a rosé cuvée born from the union of the finesse of the white grapes Pedevenda, Marzemina Bianca and Vespaiola (93%) with the power and fruitiness of Gruajo (7%), an ancient red grape variety.
This sparkling wine refermented in the bottle is stored sur lie, maintaining a light natural deposit of yeasts.
The result is a dry wine, free of sulphites added during fermentation and bottling, with a delicate foam and a balanced structure.
To the eye, it stands out for its antique pink, with small persistent bubbles that give it elegance.
On the nose, intense aromas of red fruits, such as raspberry, emerge, accompanied by fresh citrus notes.
On the palate, Fondo 53 expresses a perfect balance between finesse and power, with a vibrant minerality and a pleasant freshness that make it a versatile and dynamic wine.
Perfect for white meats and all-course dishes, thanks to its structure and freshness. Serving temperature: 8°C
It can be tasted in two ways:
1) Cloudy, shaking gently before pouring to incorporate the yeasts.
2) Clear, decanting slowly to separate the sediments.

Land characteristics: Volcanic soil, double inverted guyot training system, yield 100 q/ha.

Aging: SUR LIE, Preserved on the yeasts for at least 36 months
Winemaking Notes: Selected harvest with 10 kg crates, soft pressing and fermentation at a controlled temperature of 18° degrees. The wine completes part of the fermentation in the bottle, becoming a lively wine sur lie.
For this reason it has a slight sediment in the bottle.
Yield per hectare: 100 q/ha.
Harvest period: Second decade of September, manual harvest.
Pairings: Perfect with white meats and all-course dishes, thanks to its structure and freshness.
