The Product in Brief:
The Extra Brut Super Sei is the result of a rigorous selection of the finest Pinot Noir base wines, a Metodo Classico that represents the perfect balance of power, elegance, and depth. Born from the experience and constant research of Marco Buvoli, this wine embodies six years of aging and extraordinary complexity. The Super Sei is a Blanc de Noirs with a rich structure, created for slow evolution and the most authentic expression of the Colli Berici terroir. It is a sparkling wine capable of surprising with its finesse, density, and ability to maintain freshness even after a long period on the lees.
As sommelier André Senoner , Italian Ambassador of Pinot Noir 2021, explains: “ Intense aromas of bread crust and hazelnut, candied citrus, and balsamic notes. On the palate, a perfect balance between mineral tension and aromatic complexity: creamy, deep, with a savory vein that accompanies a very long finish. A sparkling wine of rare elegance and personality. ”

Production area: Colli Berici (Vicenza).
Soil characteristics: Clayey-calcareous soils, vineyards located at approximately 280 m above sea level, biodynamically inspired management
Color: Bright golden yellow with amber reflections; fine and persistent perlage.
Tasting Notes: Aromas of bread crust, hazelnut, candied citrus, and balsamic notes. Creamy and structured on the palate, with lively acidity and minerality. Long, elegant, and harmonious on the finish.
Serving temperature: 10–12°C
Alcohol Content: 12.00% Vol.
Vinification: Manual harvest in the first half of August. Fermentation in stainless steel and partially in wood at a controlled temperature. The base wines are aged partly in fine wood and partly in stainless steel, all on the lees with biweekly batonnage. After secondary fermentation, the wine ages in bottle for over 72 months. Extra Brut dosage: 3.75 g/l. Unclarified and unfiltered.

Harvest period: First half of August.
Pairings: Perfect with rich fish dishes, shellfish, white meats, mature cheeses, and haute cuisine; ideal for those who enjoy sipping bubbles.
