Metodo Classico Pas Dosé Cinque
The Product in Brief:
The Extra Brut Pas Dosé Cinque is the most difficult challenge for those who produce Metodo Classico, because it is born "without makeup": no dosage, no corrections, just the essence of the wine. It is the sparkling wine that must "stand on its own," and for this reason it is produced only when the cuvée expresses structure, balance, and authentic personality. It is a sharp, direct, uncompromising sparkling wine. It is not for everyone, but it represents the culmination of a long journey of mastering the Metodo Classico. Its vertical and complex profile, supported by a strong acidity, hints at evolutionary notes without ever being aggressive, making it ideal with both contemporary and traditional dishes. Marco Buvoli likes it for its fine aromas and natural elegance: it is not an arrogant sparkling wine, but a humble and self-assured wine.
As sommelier André Senoner , Italian Ambassador of Pinot Noir 2021, explains: “ The Cinque opens on the nose with aromas of acacia flowers and broom. Then comes the push of notes of sweet spices, honey, and saffron. The finish features hints of almond paste and dry pastries, which recall the olfactory finesse. On the palate, it releases minerality onto the taste buds. It enters softly, then balances with a push of freshness and a long savory vein. A wine with body and persistence, with hints of medicinal herbs such as marjoram and mint, in the form of Mediterranean scrub and undergrowth. ”

Grape variety: 100% Pinot Noir (Blanc de Noirs).
Production area: Colli Berici (Vicenza)
Soil Characteristics: Clayey-calcareous soils, vineyards located at approximately 280 m above sea level, biodynamically inspired management.
Color: Light yellow with bright and brilliant golden reflections; fine and persistent perlage.
Tasting Notes: Aromas of citrus zest, spicy notes, sensations of bread crust and dried fruit, on a delicately fruity background. The palate is taut and austere, deep and complex, long, very fresh and persistent.
Serving temperature: 10–12°C
Alcohol Content: 12.50% Vol.
Vinification: Manual harvest in the first half of August. Fermentation in stainless steel and wooden vats at a controlled temperature. Aged on the fine lees: partly in large, untoasted oak barrels, partly in French oak barriques and tonneaux, partly in stainless steel. Fortnightly batonnage. Disgorgement of the current vintage in June 2023. No final dosage (Pas Dosé).

Harvest period: First half of August
Pairings: Excellent with raw seafood, shellfish, mushroom risottos, rich fish dishes, and gourmet entrees; ideal for those who love pure, authentic bubbles.
