Pedevendo naturally refermented sur lie
The Product in Brief:
Pedevenda is a very rare grape from the Vicenza area, grown almost exclusively by the Firmino Miotti winery for over a century.
It is a vine with good vegetative vigor and constant production.
The bunch is medium-sized and has a yellowish-green skin.
It ripens late and loves clayey-calcareous hilly soils, resists cold and disease well and has, even in the hottest years, a good fixed acidity.
Selected harvest with 10 kg crates, soft pressing and fermentation at a controlled temperature of 18° degrees. The wine completes part of the fermentation in the bottle, becoming a lively wine sur lie.
For this reason it has a light base in the bottle.
This wine is completely without added sulphites: they are not added to the grapes, nor during fermentation, nor to the wine before bottling. It has a straw-yellow color with greenish reflections, with small, long-lasting bubbles.
On the nose, aromas of fresh fruit alternate, while in the mouth the good acidity supported by the light carbonation makes it pleasant, lively, ideal for any occasion, essential after a day of work. As an aperitif, excellent on holiday, it goes very well with fried fish.
It is light and very drinkable.
It can be served completely cloudy, shaking the bottle before use, or clear, decanted slowly to separate the sediments from the wine. Serve at a temperature of 8°C

Production area: Colle di Santa Lucia in Breganze, in the Vicenza foothills.
Land characteristics: Volcanic soil, double inverted guyot training system, yield 120 q/ha.
Organoleptic notes: It appears straw-yellow with greenish reflections, with small, long-lasting bubbles.
