The Product in Brief:
Marco Buvoli's Pinot Noir "S" – Opificio del Pinot Noir comes from vineyards located on the Sarego hills, in the heart of the Berici Hills, where the calcareous-clay soils and sunnier exposure give the wine a more mature and structured profile than other crus. Here, the microclimate is slightly warmer, favoring full ripening of the grapes and an intense aromatic expression. Excellent polyphenolic ripeness allowed for extended maceration, promoting rich extraction from the skins and seeds. Fermentation takes place at a controlled temperature, with some of the bunches remaining whole, and a period of maceration on the skins that can vary from 10 to 20 days depending on the vintage. After pressing, the wine aged for approximately fifteen months in French oak tonneaux, then decanted naturally and then rested in bottle for over three years, achieving a harmonious balance between fruity and spicy notes. In the glass it appears full-bodied and structured, with elegant and silky tannins that accompany aromas of small red and black fruits, wild herbs, dark spices and nuances of roasted coffee.

Soil Characteristics: Clayey-calcareous soils, vineyards located at approximately 280 m above sea level, biodynamically inspired management.
Color: Intense ruby red with garnet reflections.
Tasting Notes: The nose reveals ripe red and black berries, balsamic notes, dark spices, and subtle nuances of roasted coffee. On the palate, it is full-bodied, with elegant, silky tannins that support a harmonious, long, and very persistent structure.
Serving temperature: 16-18°C
Alcohol Content: 13.50%
Vinification: Manual harvest in the first half of September. The grapes were carefully destemmed to preserve the integrity of the berries. Extended maceration favored rich extraction from the skins and seeds. After pressing, the wine aged for approximately 15 months in French oak tonneaux, then naturally decanted and rested in bottle for over 36 months before release.
Yield per hectare: 40 q/ha
Harvest period: September, manual with selection of the bunches.
Pairings: Red meats, game, spicy dishes, and aged cheeses. Also excellent as a meditation wine.
