White Marzemina is a Venetian variety of ancient cultivation whose historical records date back to 1679 by Giacomo Agostinetti who in his “One Hundred and Ten Memories that Form the Good Factor of Villa” states: “here we have different types of white grapes: ….Marzemina, and we also have white ones of this”.
Subsequently in 1825 Acerbi (From Italian vines, Milan ed.
PG
Silvestri) calls it Berzemina di Breganze.
At the beginning of the 1900s, in the post-phylloxera period, it tended to be replaced with other more productive varieties and remained only in some marginal vineyards, and was almost always vinified in a blend with other grapes.
What stands out in the Breganze area are the Miottis who vinify it in its pure form.
This sparkling wine, refermented on the yeasts, from white Marzemina grapes, is the result of a select harvest with 10 kg crates, soft pressing and fermentation at a controlled temperature of 18° degrees. The wine then completes part of the fermentation in the bottle, becoming a lively wine sur lie.
For this reason it has a light base in the bottle.
This wine is completely without added sulphites: they are not added to the grapes, nor during fermentation, nor to the wine before bottling. It has a straw-yellow color with greenish reflections, with small, long-lasting bubbles.
On the nose it presents distinct floral aromas, such as wisteria and lily, fine and intense.
In the mouth it is very soft, full, pleasant and savoury and the pleasantly floral and fruity flavour teases the palate.
Once upon a time, in country families it was uncorked at parties, wedding banquets and generally on important occasions.
It goes well with all meals, especially with shellfish, and thanks to its softness it can also accompany Easter focaccia or margherita cakes.
