How to Make Canederli in Brodo — Traditional Trentino Recipe

Prepare the bread mixture

Cut the stale bread into cubes of about 1 cm. Put it in a large bowl, pour the milk over it and leave it to soften for 10 minutes. Meanwhile finely chop the onion and sauté it in the butter over low heat for 5 minutes, until soft and translucent. Add the diced speck and sauté for 2-3 minutes.

Chef's tip: The bread must be stale — fresh bread absorbs too much liquid and the canederli turn out soggy. If you do not have stale bread, cut the bread into cubes and dry it in the oven at 100 °C for 10 minutes.

Knead and add the ingredients

Add the eggs, grated cheese, chopped parsley, onion and speck soffritto, a grating of nutmeg, salt and pepper to the softened bread. Mix well with your hands, then add the flour a tablespoon at a time until the mixture is soft but holds together. Leave to rest covered for 15 minutes.

Chef's tip: Do not add too much flour: the dough must remain soft. If it is too hard the canederli turn out heavy and dense.

Shape the canederli

Wet your hands with cold water and take a portion of dough the size of a tangerine. Shape it into a compact ball, without squeezing too much. Continue until you have finished the dough — you should get 8-10 canederli.

Cook in the broth

Bring the broth to a boil in a large pot, then lower the heat to medium. Gently lower the canederli into the broth and cook them for 15-20 minutes, without a lid. When they are ready, they rise to the surface. Serve them hot, with a ladle of broth for each canederlo, and a sprinkling of grated Grana.

Chef's tip: Do not let the broth boil hard: the canederli fall apart. The broth must simmer gently.
