Viticulture in the Vicenza area has ancient origins. Fossil remains of vitaceae found in Salcedo confirm the presence of vines since the Tertiary era. A key moment in the region’s wine history dates back to the late 1200s, when the Bassano Vine Code introduced strict rules for wine production and trade. Vespaiola is a historic grape variety, loved by the Venetians and praised as early as 1610 by Andrea Scotto for its quality. Its name comes from the wasps attracted to the grape’s sweet juice. After difficult periods marked by phylloxera and world wars, viticulture revived, culminating in 1969 with the recognition of the Breganze DOC, which protects this iconic local wine. Anima represents the life, history and essence of the Breganze territory. It is the most authentic expression of Vespaiola in the Metodo Classico Dosage Zero style. The aromas of Vespaiola evolve elegantly, maintaining freshness and excellent drinkability.

The grapes, carefully selected during harvest, are picked in 10 kg crates to preserve their integrity. After a gentle pressing, the must ferments at a controlled temperature of 18°C and is refined in steel tanks until bottling for the secondary fermentation. This is followed by refermentation in the bottle, where the wine rests on the lees for 48 months until disgorgement. No liqueur is added, making it a pure and authentic Dosage Zéro. The color is a deep straw yellow, with aromas of Mediterranean herbs, candied citrus and notes of apple. On the palate it is dry, full, mineral and slightly acidic, offering good aromatic persistence. Excellent with fish starters (swordfish carpaccio or similar), raw seafood (oysters), shellfish, creamed cod, fried fish and vegetables.

Tasting Notes: The color is deep straw yellow with greenish hues. On the nose, elegant floral notes of acacia and chamomile emerge, along with sweet tobacco spices and passion fruit hints. On the palate it is dry, full, with slight acidity enhancing freshness and good aromatic persistence.

Serving Temperature: Serve at 10–12°C.

Alcohol Content: 11.50%

Ageing: Refermentation in the bottle, where the wine remains on the lees for 36–48 months until disgorgement. No liqueur is added, making it a pure and authentic Dosage Zéro.

The Territory

A new highway runs through the Pedemontana Veneta, a major infrastructure linking 36 municipalities between Vicenza and Treviso, improving mobility and reducing traffic in residential areas. The Pedemontana Veneta is characterized by the presence of 97 Venetian Villas, architectural masterpieces located no more than 2 km from the highway.

These villas are among the 1,769 in the foothills and 3,828 scattered throughout the region. The region is also renowned for its rich food and wine heritage, with 153 specialty products within a 5 km radius of the highway. Among these, 9 DOP products, 5 IGP products, 4 DOCG wines, 8 DOC, 4 IGT wines, 119 traditional agri-food products, and 4 Slow Food Presidia stand out. The Pedemontana Veneta offers a wide range of high-quality wines, cheeses, vegetables, cured meats, and delicacies, including, to name a few, Asiago DOP cheese, grappa and fruit distillates, Sopressa DOP, extra virgin olive oil, and Prosecco DOCG di Valdobbiadene and Asolo.

In addition to the aforementioned Prosecco, appreciated and exported worldwide, in recent years, native grape varieties that had been forgotten have been re-evaluated, including Recantina and Rabbiosa dei Colli Asolani (Pat del Colmel). In short, the Pedemontana Veneta is an unmissable tourist destination for lovers of culture, architecture, and food and wine. Thanks to the highway, visitors can easily explore the region's beauties, discover the Venetian Villas, and savor the many local delicacies. The typical products of the Pedemontana Veneta, which encompasses hilly and mountainous areas, reflect the richness and identity of a vast land with ancient agricultural and pastoral traditions.

The Producer

In Breganze, a charming town of just over eight thousand inhabitants in the province of Vicenza, stands the Firmino Miotti Winery, a true gem of local viticulture. Situated on a volcanic hill, the estate is a point of reference for those wishing to immerse themselves in the Veneto winemaking tradition and discover the authentic flavors of a unique terroir. The Firmino Miotti Winery is a family-run business with roots dating back to the mid-twentieth century. Firmino Miotti inherited the business at a very young age, taking over from his father, who passed away prematurely in the 1950s. With great passion, Firmino dedicated himself to caring for the land and the vineyards, following the precious teachings of his grandfather.

Since then, his commitment has been to keeping the family's agricultural tradition alive, innovating while respecting history and producing top-quality wines that reflect the authenticity of the terroir. Alongside Firmino, his wife Pina has always contributed with dedication to managing the winery, while his daughter Franca, sommelier and production manager, has brought a modern vision to the company. After training in oenology at the University of Bordeaux and the Conegliano School, Franca introduced innovative techniques, such as the use of wood in the aging of certain wines, combining technical expertise and passion.

Among the most iconic products of the Miotti Winery, a place of honor goes to Torcolato, a sweet wine made from dried grapes that represents the flagship of the production. The Miotti family has always paid meticulous attention to the crafting of this wine, rigorously adhering to traditional techniques passed down from generation to generation. Harvesting the grapes is a crucial moment: each bunch is carefully selected to ensure the quality required for drying. The drying process is followed by a long period of maturation in stainless steel tanks, for a minimum of four years—a rule considered sacred by the family—before bottling.

This meticulous approach is what gives Torcolato Miotti its unique flavor and popular appeal. The winery also stands out for its dedication to preserving the native varieties typical of the Breganze area, many of which would have been forgotten without the Miotti family's commitment. Among the historic grape varieties grown are Gruajo, a ruby red wine with garnet highlights, documented as early as the 18th century; Pedevendo, an extremely rare white grape grown almost exclusively by the winery; Sampà, a white wine made from Marzemina Bianca with origins dating back to 1679; and Groppello, known for its high tannins and mentioned in historical documents since the 14th century.

The quality of the Miotti family's work has been recognized nationally several times. In 2002, for example, their Valletta wine won the first gold medal at the Selezione dei Vini del Triveneto. It is an elegant and structured red, ideal for pairing with red meats and aged cheeses. In addition to wine production, the Miotti family is strongly committed to promoting the Breganze DOC and enhancing the local area. Franca, in particular, was Prior of the Magnifica Fraglia del Torcolato from 2015 to 2021, an association that celebrates one of the area's most emblematic sweet wines. The winery regularly participates in important fairs and events, such as Vinitaly, where it proudly presents its wines, best representing the local winemaking heritage.

The family believes that the key to success lies in the perfect blend of tradition and innovation.
