The Product in Brief:
A few, indeed, very few bottles in authentic artisanal garage wine style, where each wine is carefully monitored step by step, from vineyard to bottle. Unique and distinctive wines, the fruit of Marco Buvoli's passion and research, who in this project expresses his personal interpretation of great European reds. The Cabernet Franc represents one of Buvoli's rare forays beyond Pinot Noir. Inspired by the expressions of the French Loire, it combines elegance and depth, freshness and structure. The first vintage, 2020, features a very limited number of magnum bottles, a testament to the meticulous care and craftsmanship that characterize the Opificio del Pinot Noir. Harvest takes place between late September and early October. The grapes are destemmed with extreme delicacy, without pressing, so as to ferment whole and preserve all their aromatic fragrance.
The wine ages for over a year in French oak tonneaux, developing a complex aromatic profile and a velvety texture. The nose opens with intense notes of blackberry, raspberry jam, licorice, and rosemary , followed by notes of white pepper, eucalyptus, and sweet tobacco . On the palate, it is structured and deep, with dense yet silky tannins and a savory freshness that adds tension and momentum. The finish is long, balsamic, and spicy, with extraordinary elegance. A wine that reflects Buvoli's philosophy: extreme attention to detail, controlled experimentation, and absolute respect for the land.

Soil Characteristics: Clayey-calcareous soils with excellent full south-facing sun exposure.
Color: Intense ruby red with garnet reflections.
Tasting Notes: Blackberry, raspberry jam, licorice, rosemary, white pepper, eucalyptus, and sweet tobacco. Warm, structured palate with silky tannins and a long, balsamic, spicy finish.
Serving temperature: 16–18°C
Alcohol Content: 14% Vol.
Vinification: Grapes are destemmed but not crushed; fermentation with whole berries. Aged for over 12 months in French oak tonneaux, followed by bottle aging.
Yield per hectare: 30 q/ha
Harvest period: End of September – beginning of October.
Pairings: Stews, meats stewed with mushrooms, cannelloni, roasts and meats with creamy sauces.
