Gruajo from the Firmino Miotti winery is a rare and precious red wine, obtained 100% from Gruajo grapes, an ancient native vine from the Breganze hills, almost forgotten over time and brought back to light thanks to the passion and dedication of the Miotti family.
This exclusive wine, produced in limited quantities, is the symbol of a rediscovered tradition, a fundamental piece of the winemaking history of Breganze.
It is said that Firmino's father, feeling his end approaching, entrusted him with a special legacy: "My son, I do not leave you riches, but a hidden treasure.
At the end of the field you will find three ancient vines, they call them 'cruvaie'.
No one picks those bunches, because they look unripe and despised.
But you collect them, squeeze them: that wine will be your fortune." Thus was born Gruajo, a wine with a unique profile, rich in contrasts and nuances, with a taste that mixes the sweetness of maturation and the freshness of its particular acidity.
Historically considered a "capricious" grape due to the irregular ripening of the bunches - with some ripe grapes and others still green - Gruajo risked disappearing, but Firmino Miotti was able to interpret its potential, giving it back the place of honor it deserves.
The grapes are harvested manually in 5 kg crates, selected with extreme care and left to rest for 15 days in ventilated rooms, for optimal maturation.
After destemming and pressing, maceration takes place for 9 days, with punching down and pumping over to enhance the colour and structure.
The wine ages in stainless steel tanks, with fine lees in suspension and spontaneous malolactic fermentation, to maintain its distinctive character.
Ruby red in colour with garnet hues.
Aroma: Intense and enveloping, with hints of morello cherry and wild berries. The taste is dry, fresh and structured, with a light bitterish vein that gives depth and persistence. Perfect with game, even small ones, red meats and mature cheeses.
Its balanced acidity and fresh aftertaste make it ideal for dishes with a strong flavour.
It is recommended to serve at 16°C, leaving it to oxygenate for an adequate amount of time before tasting to fully appreciate its aromas.

Production area: Colle di Santa Lucia in Breganze, in the Vicenza foothills.

Land characteristics: Volcanic soil, double inverted guyot training system, yield 80 q/ha.

Organoleptic notes: Intense ruby ​​red color with garnet reflections, aroma with hints of ripe undergrowth fruit, with spicy and balsamic notes. The taste is tannic and structured, with a marked persistence that leaves the palate enveloped in deep sensations.

Serving temperature: Temperature of 16/18° C, in square glasses, it is recommended to remove it from the storage place one day before to gradually bring it to temperature.

Alcohol Content: 13.50%

Aging: The wine ages in stainless steel tanks, with fine lees in suspension and spontaneous malolactic fermentation, which softens the tannins while maintaining great complexity.

Winemaking Notes: The grapes are carefully selected and harvested by hand in 5 kg crates, then left to rest for 10-15 days in ventilated rooms.
After complete destemming and pressing, the must macerates for 9 days, with frequent punching down and pumping over to enhance the colour and structure.

Yield per hectare: 80 q/ha.

Harvest period: Third ten days of September, manual harvest.

The Pedemontana Veneta is characterized by the presence of 97 Venetian Villas, architectural masterpieces located no more than 2 km from the highway.

These villas are among the 1,769 in the foothills and 3,828 scattered throughout the region. The region is also renowned for its rich food and wine heritage, with 153 specialty products within a 5 km radius of the highway. Among these, 9 DOP products, 5 IGP products, 4 DOCG wines, 8 DOC, 4 IGT wines, 119 traditional agri-food products, and 4 Slow Food Presidia stand out. The Pedemontana Veneta offers a wide range of high-quality wines, cheeses, vegetables, cured meats, and delicacies, including, to name a few, Asiago DOP cheese, grappa and fruit distillates, Sopressa DOP, extra virgin olive oil, and Prosecco DOCG di Valdobbiadene and Asolo.

In addition to the aforementioned Prosecco, appreciated and exported worldwide, in recent years, native grape varieties that had been forgotten have been re-evaluated, including Recantina and Rabbiosa dei Colli Asolani (Pat del Colmel). In short, the Pedemontana Veneta is an unmissable tourist destination for lovers of culture, architecture, and food and wine. Thanks to the highway, visitors can easily explore the region's beauties, discover the Venetian Villas, and savor the many local delicacies. The typical products of the Pedemontana Veneta, which encompasses hilly and mountainous areas, reflect the richness and identity of a vast land with ancient agricultural and pastoral traditions.

In Breganze, a charming town of just over eight thousand inhabitants in the province of Vicenza, stands the Firmino Miotti Winery, a true gem of local viticulture. Situated on a volcanic hill, the estate is a point of reference for those wishing to immerse themselves in the Veneto winemaking tradition and discover the authentic flavors of a unique terroir. The Firmino Miotti Winery is a family-run business with roots dating back to the mid-twentieth century. Firmino Miotti inherited the business at a very young age, taking over from his father, who passed away prematurely in the 1950s. With great passion, Firmino dedicated himself to caring for the land and the vineyards, following the precious teachings of his grandfather.

Since then, his commitment has been to keeping the family's agricultural tradition alive, innovating while respecting history and producing top-quality wines that reflect the authenticity of the terroir. Alongside Firmino, his wife Pina has always contributed with dedication to managing the winery, while his daughter Franca, sommelier and production manager, has brought a modern vision to the company. After training in oenology at the University of Bordeaux and the Conegliano School, Franca introduced innovative techniques, such as the use of wood in the aging of certain wines, combining technical expertise and passion.

Among the most iconic products of the Miotti Winery, a place of honor goes to Torcolato, a sweet wine made from dried grapes that represents the flagship of the production. The Miotti family has always paid meticulous attention to the crafting of this wine, rigorously adhering to traditional techniques passed down from generation to generation. Harvesting the grapes is a crucial moment: each bunch is carefully selected to ensure the quality required for drying. The drying process is followed by a long period of maturation in stainless steel tanks, for a minimum of four years—a rule considered sacred by the family—before bottling.

This meticulous approach is what gives Torcolato Miotti its unique flavor and popular appeal. The winery also stands out for its dedication to preserving the native varieties typical of the Breganze area, many of which would have been forgotten without the Miotti family's commitment. Among the historic grape varieties grown are Gruajo, a ruby red wine with garnet highlights, documented as early as the 18th century; Pedevendo, an extremely rare white grape grown almost exclusively by the winery; Sampà, a white wine made from Marzemina Bianca with origins dating back to 1679; and Groppello, known for its high tannins and mentioned in historical documents since the 14th century.

The quality of the Miotti family's work has been recognized nationally several times. In 2002, for example, their Valletta wine won the first gold medal at the Selezione dei Vini del Triveneto. It is an elegant and structured red, ideal for pairing with red meats and aged cheeses. In addition to wine production, the Miotti family is strongly committed to promoting the Breganze DOC and enhancing the local area. Franca, in particular, was Prior of the Magnifica Fraglia del Torcolato from 2015 to 2021, an association that celebrates one of the area's most emblematic sweet wines. The winery regularly participates in important fairs and events, such as Vinitaly, where it proudly presents its wines, best representing the local winemaking heritage.
