Metodo Classico Extra Brut Rosè Otto Magnum
The Product in Brief:
This extremely limited selection in magnum format is made from a cuvée of reserve wines aged in wood. The wine has aged in bottle for eight years and was disgorged in January 2023. Only 200 numbered bottles are produced, packaged in wooden cases. It pairs wonderfully with meat dishes. Marco Buvoli, a great enthusiast of Metodo Classico Rosé, emphasizes how in Italy this style has too often been misunderstood, reducing it to a simple color. Rosé Sette, however, was created to restore rosé to its true role: the highest and most gastronomic expression of Pinot Noir. It is a sparkling wine with great structure and a long finish, best served in a large red wine glass to fully appreciate its nuances. When opened and warmed a few degrees, it reveals all its depth and aristocratic elegance. Produced only in the finest vintages, in just a few hundred bottles, it is a true gem for connoisseurs.
As sommelier André Senoner , Italian Ambassador of Pinot Noir 2021, explains: “ The nose opens delicately with orange blossoms, followed by nectarines and ripe apricots, small berries and notes of Mediterranean scrub, rosemary and thyme. On the palate it is decisive, with accentuated saline sensations that release a cleansing and invigorating sapidity. The palate is soft yet dense, with a smoky finish of burnt straw and chalky minerality that seals its complexity. ”

Grape variety: 100% Pinot Noir (Rosé de Saignée)
Production area: Central-southern Veneto (Berici and Euganean Hills).
Soil Characteristics: Clayey-calcareous soils, vineyards located at approximately 280 m above sea level, biodynamic management
Color: Antique pink with copper hues; fine and persistent perlage.
Tasting Notes: A bouquet of orange blossoms, nectarines, ripe apricots, and small berries. Notes of Mediterranean scrub, rosemary, and thyme, with a smoky, mineral finish. On the palate, it is savory, dense, and deep, with lively acidity and a very long finish.
Serving temperature: 10–12°C
Alcohol Content: 12.50% Vol.
Vinification: Manual harvest in the first half of August. Fermentation in stainless steel at a controlled temperature. Aged in wood on the fine lees until the secondary fermentation, which takes place between May and June. After a long period of maturation on the lees, the current vintage was disgorged in December 2023. Extra Brut dosage: 2.5 g/l.
Sugars: 1.5 g/l
Harvest period: First half of August
Pairings: Perfect with rich fish dishes, shellfish, tuna or smoked salmon, white meats, and gourmet dishes. Also ideal with aged cheeses or paired with contemporary cuisine.
