Souvis di Tenuta Do Leoni nasce sui Colli Berici, nel territorio di Bugano, e rappresenta il secondo capitolo di un progetto vitivinicolo contemporaneo che unisce sostenibilità, ricerca e valorizzazione del paesaggio. Dopo l'esordio della prima annata, il 2025 segna una naturale evoluzione del percorso intrapreso dall'azienda, confermando la volontà di interpretare il territorio attraverso varietà innovative e una gestione agricola rispettosa dell'ambiente. Protagonista è il Souvignier Gris, vitigno PIWI resistente nato nel 1983 a Friburgo, in Germania, e introdotto in Italia nel Registro Nazionale delle Varietà di Vite nel 2014. Una varietà ancora poco diffusa nel panorama vitivinicolo italiano che rappresenta una delle espressioni più interessanti della viticoltura sostenibile contemporanea. La sua naturale resistenza alle principali malattie fungine permette infatti di ridurre sensibilmente gli interventi in vigneto, favorendo un approccio produttivo più rispettoso dell'ecosistema.

Prodotto in una tiratura limitata e numerata, questo vino bianco da Souvignier Gris in purezza nasce da vigneti coltivati su suoli di argille rosse e rocce calcaree di origine marina, tipici dei Colli Berici. Un terroir che conferisce al vino una spiccata impronta minerale e una struttura elegante. In questa seconda vendemmia emerge una maggiore consapevolezza nell'interpretazione del vitigno e del territorio, dando vita a un profilo ancora più armonico ed equilibrato. Nel calice si presenta con un giallo dorato luminoso, attraversato da delicate sfumature ramate. Il profilo aromatico è intenso e raffinato, con note agrumate, richiami alla frutta tropicale e leggere nuance floreali. Al palato si distingue per freschezza, equilibrio e una fine acidità che accompagna il sorso con precisione, esaltando la componente minerale. Un vino da aperitivo che accompagna con naturalezza crostini di formaggio caprino e noci. Si esprime con equilibrio anche alla prima portata del pasto, in abbinamento al pescato - particolarmente riuscito con gamberi grigliati - e a preparazioni delicate, dai risotti agli asparagi a quelli alle erbe selvatiche. Interessante anche il dialogo con alcune espressioni della cucina asiatica, dove le note speziate trovano corrispondenza in preparazioni che prevedono l'uso di zenzero o lemongrass. Un'etichetta che racconta una nuova idea di vino: sostenibile, identitaria e profondamente legata al territorio dei Colli Berici.

The Territory

Veneto, located in northeastern Italy, is renowned for its extraordinary history, breathtaking landscapes and exquisite food and wine traditions. Veneto cuisine and wines are appreciated throughout the world and reflect the cultural and territorial diversity of the region. Veneto is famous for its fascinating historical cities such as Venice, Verona and Padua, which are home to countless works of art and architectural treasures. Venice, the city of canals and palaces, is considered one of the most romantic and fascinating destinations, while Verona, the city of Romeo and Juliet, is famous for its Roman amphitheatre and opera performances. Padua, with its historic University and the Scrovegni Chapel, offers a wide range of cultural attractions.

The Veneto region is known for its excellent wine production, which includes famous wines such as Prosecco, Valpolicella and Soave. Piave is the name of a DOC wine produced in the provinces of Treviso and Venice around the lower course of the Piave. The vineyards of Veneto extend from the hills of Treviso, Vicenza and Verona to the plains of the Po. Venetian cuisine is equally varied and delicious, with fish and seafood dishes along the coast and in the Venetian Lagoon, and more robust meat and vegetable recipes inland. Some of the region's signature dishes include risotto, bigoli (egg pasta), polenta, and baccalà alla vicentina. In addition to the aforementioned Prosecco, appreciated and exported throughout the world, in recent years, native vines that had been forgotten have been re-evaluated, among which the Recantina and the Rabbiosa dei colli Asolani (Pat del Colmel) stand out. Once called “Rabbioso” or “vino del Piave”, Raboso is a native red grape variety from Veneto with a thousand-year history (Italo Cescon). The Producer

Tenuta Do Leoni is nestled on the hill of Bugano, in the Riviera Berica near Vicenza, at the beginning of the Colli Berici in the province of Vicenza, in North-East Italy, a highly renowned wine-growing area. It is a contemporary wine project born from the desire to bring new life to a family-owned land preserved for generations. Here, wine is not just agricultural production, but the result of a journey shaped by memory, research, and responsibility towards the landscape. At the helm of the estate are Giovanni and Federica, who chose to transform a long-abandoned area into a regenerated agricultural ecosystem. The name Do Leoni reflects this shared vision: a family business looking towards the future without losing its connection to its roots, passing on to new generations the value of the land and its care. The wine project develops with an agroecological and sustainable approach, based on farming practices that respect soil fertility and biodiversity. Soil preparation, forest restoration, and the introduction of green manure crops have been key steps in creating a vineyard fully integrated into the landscape of the Colli Berici.

A defining element of the production philosophy is the choice to cultivate PIWI grape varieties, naturally resistant to the main fungal diseases of the vine. This decision allows for reduced intervention in the vineyard and supports a more conscious form of viticulture, focused on ecosystem protection and wine quality. The term PIWI comes from the German pilzwiderstandsfähig (“fungus-resistant”) and identifies a new generation of vines capable of combining expressive character with agricultural sustainability. The Bugano area, with its red clay soils and marine-origin limestone rocks, offers ideal conditions for producing wines with strong personality. A landscape already known in past centuries for the quality of its grapes, as evidenced by historical accounts and travelers’ stories describing these hills during harvest time. In this context comes LA PRIMA, the estate’s first wine: a pure Souvignier Gris, initially produced in a micro-batch of just 330 hand-numbered bottles. A wine that marks the beginning of a winemaking journey focused on precision and on enhancing the varietal’s potential. Its golden color with copper reflections, citrus aromas, and notes of exotic fruit are supported by a fresh palate and a pronounced mineral character.

Alongside Souvignier Gris, the project dedicated to Prior is growing—a PIWI red grape variety deeply rooted in the estate’s soils and representing the future of production. Its evolution requires time and patience, essential elements in a viticulture that respects natural rhythms and prioritizes quality over speed. Tenuta Do Leoni is also a place of relationships and cultural exchange. The project has developed in dialogue with Berardo Da Schio, an agronomist and advocate of contemporary sustainable agriculture, sharing the goal of enhancing the territory while fully respecting environmental balance.
