Vespaiola is a historic vine, loved by the Venetians and praised as early as 1610 by Andrea Scotto for its quality.
Its name comes from the attraction that the sweet juice of the grape exerts on wasps.
After difficult periods, between phylloxera and world wars, the recovery of viticulture culminated in 1969 with the recognition of the DOC Breganze, which protects this iconic wine of the territory.

This Torcolato by Firmino Miotti is produced exclusively with Vespaiola grapes, grown on the volcanic hills of Santa Lucia in Breganze.
It is obtained from a wise selection and extreme care of the bunches of Vespaiola grapes which, to dry, are twisted (intorcolà) around strings in a well-ventilated environment.
Only the best, sparsest bunches are harvested for drying.

It is after Christmas that the sweet Torcolato is finally consecrated as wine.

Production is limited both due to the low yield and the typically artisanal care that this wine requires.
Fermentation takes a very long time, it can last a few months until it stops spontaneously leaving the wine still sweet.
It will remain to rest in steel tanks for a few years before being bottled.
Golden in colour, with an intense aroma of cooked apple, honey, apricot, raisins, dates and dried fruit, it is broad, long and enveloping in the mouth.

The freshness provided by the Vespaiola grapes contrasts with the sweetness of the drying process and makes this wine elegant and not cloying.
Torcolato also falls into the narrow circle of meditation or conversation wines.

It is also excellent on its own, but goes well with blue or very tasty cheeses; at the end of a meal it enhances small pastries and dry desserts.
Torcolato stands the test of time and it is always a pleasant surprise to open bottles from a few decades ago, often kept as a memento of some happy family event.

The Territory

Pedemontana Veneta is a charming and hospitable landscape area located between the provinces of Treviso and Vicenza, in Veneto. This area combines territory, culture and development prospects in a unique context.

The Pedemontana Veneta is crossed by a new Superstrada, an important infrastructure that connects 36 municipalities between Vicenza and Treviso, improving mobility and reducing traffic in residential areas.


The territory of the Pedemontana Veneta is characterized by the presence of 97 Venetian Villas, architectural masterpieces located no more than 2 km from the Superstrada. These villas are part of the 1,769 present in the pedemontana area and of the 3,828 scattered throughout the regional territory.

The region is also famous for its food and wine richness, with 153 typical areas within a 5 km radius of the Superstrada. Among these, 9 DOP products, 5 IGP, 4 DOCG wines, 8 DOC, 4 IGT, 119 traditional agri-food products and 4 Slow Food presidia stand out.

The Pedemontana Veneta offers a wide range of high-quality wines, cheeses, vegetables, cured meats and delicacies, including, to name a few, Asiago DOP, Morlacco and Imbriago cheeses, Grappa and fruit distillates, Sopressa DOP, stone-ground flours from ancient cereals (Mulino Terrevive), Extra Virgin Olive Oil, Prosecco DOCG from Valdobbiadene and Asolo.

In addition to the aforementioned Prosecco, appreciated and exported throughout the world, in recent years, native vines that had been forgotten have been re-evaluated, among which the Recantina and the Rabbiosa dei colli Asolani (Pat del Colmel) stand out.

In short, the Pedemontana Veneta is a must-see tourist destination for lovers of culture, architecture and food and wine. Thanks to the Superstrada, visitors can easily move between the beauties of this region, discover the Venetian Villas and taste the many local delicacies.
The typical products of the Pedemontana Veneta, which includes hilly and mountainous areas, reflect the richness and identity of a vast land with ancient agricultural and pastoral traditions.

The local gastronomy offers a continuous discovery of flavours and traditions. The highly prized Grappa Black Truffle (Bruno Ceccato) in the black scorzone, uncinato and black prized varieties, in the summer and winter versions. Other legumes grown in the area include the Borlotto Nano di Levada, the Posina Bean and the Borso del Grappa Peas.

Prosecco area; Asolani and Valdobbiadene hills - Pedemontana Veneta

The Pedemontana Vicentina boasts an excellent production of fruit and vegetables, including the DOP white asparagus of Bassano del Grappa, the IGP cherry of Marostica, the Durona of Chiampo, and the Torcolato of Breganze (Firmino Miotti), one of the longest-lived Italian passito wines.

In the heart of the Dolomites, the Miele delle Dolomiti Bellunesi DOP is produced in the Province of Belluno, easily accessible from the Superstrada Pedemontana Veneta. Thanks to the richness of the woods and pastures, the honey of the Belluno area has unique characteristics deriving from the typical flora of mountain environments.

The area on the slopes of Monte Grappa obtained the DOP mark in 2001 as "Olio Veneto del Grappa". Appreciated for its sweet and delicate taste and very low percentage of acidity, its organoleptic characteristics derive above all from the composition of the land, but also from the climate, usually without fog and stagnant humidity.

The municipality of Pove boasts the denomination "Conca degli Ulivi", the Extra Virgin Olive Oil produced here (Oro de Poè) in small but very precious quantities, boasts prizes and awards in prestigious international competitions. In the Asolo hills another native species called Asolo is grown, recognized in 2017 with the sub-zone DOP Asolo Olio Extra Vergine di Oliva della Pedemontana del Grappa.
The slopes of Monte Grappa are also famous for the Marroni del Monfenera PGI.

Chestnut cultivation is recovering in the Pedemontana del Grappa and Montello thanks to numerous events, such as the Monfenera Chestnut Market Exhibition.

Finally, in the Bassano area, the Bassano White Asparagus is grown, which obtained the DOP in 2007.

It has a characteristic bittersweet taste that distinguishes it from all other species of asparagus. It is tender and not woody, with a fresh appearance and smell. Harvested every day at dawn to ensure the highest quality of the product, after harvesting the asparagus are washed, cleaned and selected strictly by hand. They are then tied with a willow sucker called “Stroppa”.

This is an unmistakable characteristic of the Bassano White Asparagus.

The Producer

In Breganze, a charming town of just over eight thousand inhabitants located in the province of Vicenza, stands the Cantina Firmino Miotti, an authentic jewel of local viticulture. Situated on a hill of volcanic origin, the farm represents a point of reference for those who want to immerse themselves in the Venetian winemaking tradition and discover the authentic flavors of a unique territory.

Cantina Firmino Miotti is a family-run business that has its roots in the mid-twentieth century. Firmino Miotti inherited the business at a very young age, when in the 1950s he took over from his father, who passed away prematurely. With great passion, Firmino dedicated himself to caring for the land and the vineyards, following the precious teachings of his grandfather.

Since then, his commitment has been to keep the family agricultural tradition alive, innovating while respecting history and producing top-quality wines that reflect the authenticity of the territory.

Default alt textAlongside Firmino, his wife Pina has always contributed with dedication to the management of the cellar, while his daughter Franca, sommelier and production manager, has brought a modern vision to the company.

After training in oenology at the University of Bordeaux and the School of Conegliano, Franca introduced innovative techniques such as the use of wood in the refinement of certain wines, combining technical expertise and passion.

Among the most iconic products of the Miotti Winery, a place of honor goes to Torcolato, a sweet wine made from dried grapes that represents the flagship of the production.

The Miotti family has always paid obsessive attention to the creation of this wine, rigorously respecting the traditional techniques passed down from generation to generation. The grape harvest is a crucial moment: each bunch is carefully selected to guarantee the quality necessary for drying. The drying process is followed by a long stay of the wine in steel tanks, for a minimum of four years, a rule considered sacred by the family before proceeding to bottling. This careful approach is what gives Torcolato Miotti its unique flavor and the public's appreciation.

The winery also stands out for its preservation of the native varieties typical of the Breganze area, many of which would have been forgotten without the commitment of the Miotti family. Among the historic vines cultivated, the most notable are Gruajo, a ruby red wine with garnet reflections documented as early as the eighteenth century; Pedevendo, a very rare white grape grown almost exclusively by the winery; Sampà, a white from Marzemina Bianca with origins dating back to 1679; and Groppello, known for its high tannicity and mentioned in historical documents since the fourteenth century.

The quality of the work carried out by the Miotti family has been recognized several times at a national level. In 2002, for example, the Valletta wine obtained the first gold at the Selezione dei Vini del Triveneto. It is an elegant and structured red, ideal to accompany red meats and mature cheeses.

In addition to wine production, the Miotti family is strongly committed to promoting the DOC Breganze and enhancing the territory. Franca, in particular, was Prior of the Magnifica Fraglia del Torcolato from 2015 to 2021, an association that celebrates one of the most emblematic sweet wines of the area. The winery regularly participates in important fairs and events, such as Vinitaly, where it proudly presents its wines, best representing the local wine heritage. The family is convinced that the key to success lies in the perfect fusion between tradition and innovation.

The history of Cantina Firmino Miotti is not only a tale of passion and dedication, but also an example of how safeguarding biodiversity can enrich the territory. The winery represents one of the last custodians of ancient knowledge and native varieties, which are today the symbol of an authentic viticulture that respects historical roots.
