Torcolato Breganze DOC
The Product in Brief:
Vespaiola is a historic vine, loved by the Venetians and praised as early as 1610 by Andrea Scotto for its quality.
Its name comes from the attraction that the sweet juice of the grape exerts on wasps.
After difficult periods, between phylloxera and world wars, the recovery of viticulture culminated in 1969 with the recognition of the DOC Breganze, which protects this iconic wine of the territory.
This Torcolato by Firmino Miotti is produced exclusively with Vespaiola grapes, grown on the volcanic hills of Santa Lucia in Breganze.
It is obtained from a wise selection and extreme care of the bunches of Vespaiola grapes which, to dry, are twisted (intorcolà) around strings in a well-ventilated environment.
Only the best, sparsest bunches are harvested for drying.
It is after Christmas that the sweet Torcolato is finally consecrated as wine.
Production is limited both due to the low yield and the typically artisanal care that this wine requires.
Fermentation takes a very long time, it can last a few months until it stops spontaneously leaving the wine still sweet.
It will remain to rest in steel tanks for a few years before being bottled.
Golden in colour, with an intense aroma of cooked apple, honey, apricot, raisins, dates and dried fruit, it is broad, long and enveloping in the mouth.
The freshness provided by the Vespaiola grapes contrasts with the sweetness of the drying process and makes this wine elegant and not cloying.
Torcolato also falls into the narrow circle of meditation or conversation wines.
It is also excellent on its own, but goes well with blue or very tasty cheeses; at the end of a meal it enhances small pastries and dry desserts.
Torcolato stands the test of time and it is always a pleasant surprise to open bottles from a few decades ago, often kept as a memento of some happy family event.
