Dive into a culinary experience that joins the Italian tradition of marinating to the characteristic flavours of Belgian beer. Beer-marinated tofu is a vegan recipe that wins you over with its versatility and with the contrast between the delicacy of the tofu and the aromatics of Bratty Blanche Beer, a Belgian wheat beer with spiced, refreshing notes.

This dish is a perfect example of how Italian cooking can evolve and take in international influences while keeping intact its attention to the quality of ingredients and the balance of flavours. Ideal for aperitivi, starters or as a light main course, marinated tofu is made for informal dinners with friends, or as a tempting dish for anyone looking for plant-based alternatives with real character.

The citrus and spice notes of the wheat beer soak into the tofu, giving a dish of complex but delicate flavour, where the soft texture of the tofu meets the aromatics of the marinade. The technique of marinating has deep roots in Italian culinary tradition, particularly in coastal regions where fish was marinated to keep it longer. Over time the practice evolved into a method for bringing out the flavour of ingredients, and not only those of animal origin. The Veneto, with its strong brewing tradition, has naturally taken up the use of beer in cooking.

Tofu, although eastern in origin, is now made in Italy too, to high standards, showing how well Italian cooking can take in international ingredients and read them in a local key. Beer, and Belgian wheat beer above all with its distinctive character, finds in contemporary Italian cooking fertile ground for experiments that join tradition and invention.

Wine and Beer Pairings

Tofu has no flavour of its own: what you drink is chosen on the marinade, and here the marinade is dense — wheat beer, soy sauce, maple syrup, smoked paprika, rosemary, lemon zest. Umami, sweet, smoke and citrus in the same mouthful. What you want is an aromatic, taut wine, not a wine of structure.

The White We Recommend

Sauvignon Veneto I.G.T. — Italo Cescon — Sauvignon is the only white that keeps pace with a marinade this aromatic: its green and citrus notes pick up the rosemary and the lemon zest, while the cutting acidity puts the palate back in order after the sweetness of the maple syrup. Against the smoke of the paprika it makes a contrast, and one that is needed. Serve at 10–12 °C.

If You Want a Red

Pinot Nero Veneto I.G.T. — Italo Cescon — The smoked paprika is the hook: Pinot Noir has fine red fruit and a note of undergrowth that speaks well to the smoke, and its silky tannin finds nothing in the tofu to stiffen. It is the only red that does not weigh on a plant-based dish this delicate. Serve at 14–16 °C.

The Beer from the Marinade

Bratty Blanche Beer — birra di frumento belga — Here the pairing is already in the recipe: the same Blanche that marinates the tofu is drunk beside the dish, and it is the most direct way of making everything add up — the coriander and citrus in the glass repeat the ones that went into the marinade. There is enough left in the bottle you used to marinate, and the carbonation clears away the oil from cooking. Serve at 5–6 °C.

Serve It With

To round off the dish, the yeast-free crackers with rosemary pair perfectly with the herbal notes of the marinade, while the crackers with sesame and poppy seeds add a pleasant crunch that contrasts with the softness of the tofu.

Variations and Tips

  • Try adding a teaspoon of Dijon mustard to the marinade for a piquant, aromatic touch
  • For a spicier version, work lightly toasted fennel or cumin seeds into the marinade
  • If you prefer a crisper texture, dust the marinated tofu with rice flour before cooking
  • For a summer dish, serve the marinated tofu cold on a bed of mixed salad with fresh sprouts

Frequently Asked Questions

How long should the tofu marinate?

The minimum marinating time is 4 hours, but for the best results we suggest leaving the tofu to marinate for 8–12 hours in the fridge. The long marinade lets the tofu take up the flavours of the beer and the spices completely.

Can I use another beer instead of the Bratty Blanche?

Yes, you can replace it with other wheat beers such as the Witty Weizen Beer, which keeps the spiced and fruity character that suits the marinade. Avoid beers that are too bitter or too dark, which could cover the flavour of the tofu.

How can I keep the marinated tofu?

Raw marinated tofu keeps for 2–3 days in the fridge, while once cooked it is best eaten within 24 hours. You can also freeze the tofu once marinated, before cooking, to have it ready to use.
