Amaranto 72 Veneto I.G.T. “Riserva”
The Product in Brief:
Amaranto 72 – the year this project, strongly wanted by Italo Cescon, was born – is one of the winery's most distinctive expressions. Into this wine the founder poured all his passion and skill, giving life to a label that brings together the tradition of the Piave and a modern vision. The 2017 vintage expresses at its best the balance of this skilful blend: Cabernet Sauvignon, Merlot and Cabernet Franc joined by Raboso Piave for an original touch. The grapes come from clay soils trained in sylvoz with restrained yields, which adds to the concentration and structure of the wine. During vinification the musts undergo a 20% “saignée”. Fermentation is carried out at 25°C with maceration of about 25 days. Amaranto 72 finds its balance in the long maturation in the vat and comes into its own through the full maturation of 18 months in tonneaux, recalling the refined winemaking of the great barrel-aged meditation wines.
In the glass it shows an extremely dense ruby red tending to black. The bouquet is complex and elegant, with delicate herbaceous notes and hints of violet, blackberry and ripe cherry. On the palate it is full and soft, with good concentration and acidity; in the long finish it is complex and releases hints of earth and redcurrant. Particularly suited to ageing, it evolves over time while keeping balance and depth. Ideal with stewed roe deer, beef braised in Amaranto 72, grilled meats and mature cheeses with honey and mostarda.
