Produced from our vineyards located high in the hills, Asolo Prosecco Superiore DOCG is a pure expression of our terroir's unique character. The clay soil and the marked temperature range between day and night give this wine a pronounced minerality and a captivating array of aromas. We meticulously cultivate the vineyards: we minimize the use of machinery and pesticides, preferring manual work that respects the soil's balance and encourages the presence of wild microfauna. We have developed a carbon dioxide management system during primary fermentation, which helps limit the oxidative effects of oxygen in the wine. This significantly reduces the amount of sulfites added to the wine, allowing us to certify this on the back label of our bottles. In the cellar, once the grapes have been pressed, all the pomace is recovered and transformed into compost, which will become a beneficial organic biofertilizer for our vineyards.
The harvest is entirely manual, ensuring that each bunch arrives at the cellar intact, ready for gentle pressing that preserves the purity of the must. On the palate, it stands out for its freshness and savory character, with a fine and persistent perlage that enhances every sip. Ideal as an aperitif or paired with fish dishes, this wine embodies the elegance and sophistication of the Asolo hills. The diversity of its vineyards makes this a decidedly lively and cheerful Asolo DOCG Superiore. Fruity softness is the main element, following the mineral freshness and fruitiness typical of high-hill Asolo DOCG Superiore. Extreme attention to the entire production process has allowed us to maintain a quantity of sulphites lower than the limits imposed by the organic wine production regulations.

Land Characteristics: Our vineyards are located in the designated ASOLO DOCG area and are situated on the steepest slopes of the Asolo hills. The Asolani Hills area features clayey soil mostly made up of “calcareous marl,” rocks that have sedimented over the centuries and are predominantly limestone mixed with finer clayey and pebbly material, known as “sandstone.”
Tasting notes: Splendid straw yellow with green reflections, small and persistent bubbles rise from the glass. Subtle and multifaceted aromatic profile articulated in delicate fruity notes.
A light minerality provides the backdrop to a beautiful softness. The balance is pleasant, the sip is delicate and enveloping, accompanied by fruity highlights. In the glass it gives off sweet floral and mineral notes.

Vinification: The grapes are selected and harvested by hand, pressed in a controlled environment and the must is then fermented in steel. Slow refermentation in autoclave for 40 days and subsequent bottling.
