Our philosophy is simple and authentic, just like the land we cultivate. Our mission is driven by a passion rooted in tradition, an intimate knowledge of raw materials, and a profound respect for the territory. We believe in the synergy between man and nature, in respecting seasonal cycles, and in the importance of preserving the quality of our grapes from vineyard to bottle. Sustainability is a cornerstone of our estate. At every stage of production, from cultivation to vinification, we strive to optimize processes to minimize environmental impact, saving energy and resources. Every gesture, every choice reflects our dedication to sustainable development that safeguards the land and respects its biodiversity. Our vineyards are located in the heart of the Asolo DOCG, on steep hills where the predominantly clay soils, rich in limestone marl, give our wines a unique structure. The roots of our vines cling to a land steeped in history, where the contrast between the hardness of the rock and the fragility of the clay is reflected in the depth and elegance of our wines.

Harvesting is entirely manual, ensuring that each cluster reaches the cellar intact, ready for gentle pressing that preserves the purity of the must. Thanks to advanced technologies, such as our carbon dioxide management system during fermentation, we are able to reduce the use of sulfites, maintaining high quality standards and certifying this commitment in our bottles. Even the pomace is not wasted: we transform it into compost to nourish the vineyards, in a virtuous cycle that respects nature. Our grapes, particularly Glera, find their ideal habitat here. The hills of Asolo, with their unique microclimate, are perfect for producing Asolo Prosecco DOCG, a wine that embodies the tradition and character of this land. Native varieties such as Bianchetta, Perera, and Verdiso further enrich our range, expressing the diversity and richness of our territory. Manzoni Bianco, created by Professor Luigi Manzoni, is another grape we proudly cultivate. Thanks to its versatility, it allows us to produce wines with unique aromatic and flavor profiles, capable of surprising even the most demanding palates. Behind every bottle of wine stands our family, which for three generations has worked this land with love and dedication, passing down knowledge rooted in the past while looking with determination to the future. Our wines are the most authentic expression of this commitment, and each tells a unique story, deeply tied to the terroir and the varieties we grow.

Asolo Prosecco Superiore DOCG

Born from our vineyards located in the high hills, Asolo Prosecco Superiore DOCG is a pure expression of the typicity of our territory. The clay soils and the strong temperature variation between day and night give this wine a marked minerality and a fascinating aromatic spectrum. On the palate, it stands out for its freshness and sapidity, with a fine and persistent perlage that enhances every sip. Ideal as an aperitif or paired with fish dishes, this wine represents the elegance and refinement of the Asolo hills.

Manzoni Bianco

Manzoni Bianco is a rare and precious wine, the result of a cross between Rhine Riesling and Pinot Blanc, created by Professor Luigi Manzoni. This grape variety has found in our hills the perfect environment to best express its extraordinary aromatic characteristics. In the high hills, Manzoni Bianco produces a wine with an intense bouquet of floral and fruity notes and a harmonious, fresh, and savory body. Two of its most representative expressions are Costalunga and Sogno Dosaggio Zero.

Costalunga is an elegant and refined wine, produced exclusively from grapes grown in the vineyard of the same name. It is characterized by a bright yellow color, a complex bouquet of white flowers and yellow-fleshed fruits, and a full and persistent taste. Thanks to its freshness and aromatic richness, Costalunga is a wine that ages well, maintaining its integrity and complexity over time.

Sogno Dosaggio Zero, on the other hand, is a surprising Metodo Classico, obtained from Manzoni Bianco and aged on the lees for at least 48 months. This sparkling wine is an unprecedented expression of the grape variety, with an extremely fine and creamy perlage, a lively acidic attack, and intense minerality. On the palate, hints of almond, bread crust, grapefruit, and peach emerge, making it perfect for bold gastronomic pairings such as grilled shellfish, beef tartare, or vitello tonnato.

Our Cirotto winery, though small in size, stands out for its great attention to quality and its strong bond with the territory. Every wine we produce is the result of years of study, passion, and experimentation, designed to offer a unique sensory experience that celebrates the beauty of the Asolo hills and the richness of its native grape varieties.
