Produced from our vineyards located on high hills, Asolo Prosecco Superiore DOCG is a pure expression of the typicality of our territory.
The clayey soil and the strong temperature range between day and night give this wine a marked minerality and a fascinating aromatic range.
The care we put into the vineyard is meticulous: we reduce the use of machinery and pesticides to a minimum, preferring manual work that respects the balance of the soil and favors the presence of wild microfauna.

We have developed a system for managing carbon dioxide during primary fermentation, which helps limit the oxidative effects of oxygen in the wine; by doing so, we are able to significantly reduce the addition of sulphites in the wine and allows us to certify this on the back label of our bottles.
In the cellar, once the grapes have been pressed, all the marc is recovered to be transformed into compost, which will become a beneficial organic biofertilizer for our vineyards.

The harvest is completely manual, ensuring that each bunch arrives at the cellar intact, ready for a delicate pressing that preserves the purity of the must.
On the palate it stands out for its freshness and flavour, with a fine and persistent perlage that enhances every sip.
Ideal as an aperitif or paired with fish dishes, this wine represents the elegance and refinement of the Asolo hills.

The expression of the two vineyards, vinified separately, makes this Asolo DOCG Superiore unique with a residual sugar content of 15 g/l.
The fruity softness is the main element that follows the mineral freshness and the typical fruitiness of the Asolo DOCG Superiore from the high hills.
Extreme attention to the entire production process has allowed us to maintain a quantity of sulphites lower than the limits imposed by the organic wine production regulations.

Land Characteristics: Our vineyards are located in the designated ASOLO DOCG area and are situated on the steepest slopes of the Asolo hills.
The Colli Asolani area features clayey soil on which mostly “calcareous marl” rests, that is, rocks sedimented over the centuries and mainly made up of limestone mixed with thinner clayey and pebbly material, called “sandstone rock”.

Tasting notes: Crystalline, splendid straw color with green reflections, small and persistent bubbles rise from the glass.
The intense fruity composition is articulated in delicate presences of apple, pear and white flowers.
A light minerality provides the backdrop to a beautiful softness.
Extremely elegant and balanced.
The sip is delicate and enveloping, which stands out in its balance, accompanied by fruity notes.
In the glass it gives off sweet floral and mineral notes.

Even the pomace is not wasted: we transform it into compost to nourish the vineyards, in a virtuous cycle that respects nature. Our grapes, particularly the Glera, find their ideal habitat here. The Asolo hills, with their unique microclimate, are perfect for the production of Prosecco Asolo DOCG, a wine that embodies the tradition and uniqueness of this land. Manzoni Bianco, born from the studies of Professor Luigi Manzoni, is another grape variety we proudly cultivate.
