The Product in Brief:
Italo Cescon's Cabernet Sauvignon Riserva, Piave DOC, represents one of the most structured and long-lived expressions of the Piave region. Cabernet, a grape variety originally from Bordeaux, has found an ideal habitat in Eastern Veneto, enhancing its structure, elegance, and ability to evolve over time. The grapes come from approximately 40-year-old vineyards located in Fagarè della Battaglia, on clayey soils trained using the Guyot system with a high planting density. The harvest, carried out by hand in the last ten days of September, selects only perfectly ripe bunches. After destemming, a 3-4 day cold pre-fermentation maceration is carried out, followed by alcoholic and malolactic fermentation at a controlled temperature. The wine matures in oak barrels for 24 months and is completed with 12 months of bottle aging, giving the wine complexity, balance, and aromatic depth.
In the glass, it displays a full ruby red. The bouquet is intense and complex, with clear notes of berries and spices, enriched by elegant, ethereal oak accents. On the palate, it is warm and dry, with good depth and harmony, with a natural freshness that leads to a lingering finish. Ideal with roasted red meats, poultry, and game, it also pairs perfectly with aged cheeses. In the Venetian tradition, it expresses its personality best with Venetian-style tripe, mixed boiled meats, or veal stew.
