Cuvèe Lino Durello Extra Brut Metodo Classico
The Product in Brief:
Cuvée Lino by Dama del Rovere is an Extra Brut Durello Classic Method that originates on the volcanic hills of Roncà, in the heart of eastern Lessinia, in the province of Verona, one of the most suitable territories for cultivating Durella. The vineyard, located in Brenton at an altitude of approximately 450 meters, has its roots in a historic plantation from the late 1960s and benefits from a unique pedoclimatic environment, characterized by volcanic soils and significant temperature fluctuations. Durella, an indigenous grape variety with natural sapidity, acidity, and an extraordinary aptitude for sparkling wine production, finds one of its most authentic expressions here. At the heart of Dama del Rovere's Classic Method sparkling wines is the patient work of Massimo Prà, who for years has been building his bases with great precision and a vision oriented towards time. Part of the wines is set aside as vin de réserve, carefully stored season after season and then used in blends to provide stylistic continuity, depth, and recognizability to the various cuvées.
This work is structured today as a true perpetuelle: a dynamic reserve in which small quantities of wines from previous vintages are kept alive and progressively integrated into subsequent blends, helping to build depth, stylistic continuity, and vineyard memory over time. This approach has also been refined through significant professional experience in Burgundy, where the culture of blending, precision, and waiting is an integral part of the production identity. After manual harvesting between late August and mid-September, vinification takes place in stainless steel tanks; the wine then rests in oak barrels for about a year before undergoing the long aging in the bottle on its lees. The result is an Extra Brut Classic Method sparkling wine of great tension and verticality, capable of combining freshness, depth, and a distinct mineral imprint. The long aging of at least 36 months on the lees contributes to developing aromatic complexity, fine perlage, and gustatory elegance.
