Pinot Grigio DOC of the Veneto
The Product in Brief:
Pinot Grigio, a grape variety with a singular pink berry, is a mutation of Pinot Noir, cultivated in Italy for over a century, initially in Friuli Venezia Giulia and today present in many DOCs including Friuli Grave and Doc Delle Venezie.
This Pinot Grigio DOC delle Venezie is produced with 100% Pinot Grigio grapes in the planting areas of Fagarè, Vallonto and Fontanelle in the Treviso area on clayey soils of semi-alluvial origin.
Its dry and fresh temperament leaves room for refined hints of fruit, accompanied by full flavor, resulting in a perfect balance between softness and hardness and guaranteeing an excellent wine.
Ideal for aperitifs to accompany sweet and sour and spicy dishes, serve at a temperature of 8° C, in very cold square glasses.

Production area: Planting area in the municipalities of Fagarè, Vallonto, Fontanelle in the Treviso area.
Land characteristics: Clayey soil of semi-alluvial origin, Guyot training system, 4,500 plants per hectare.
Tasting notes: Full straw yellow colour, intense, elegant aroma, with fruity notes of peach and citrus fruits and a light spiciness of nutmeg.

Serving temperature: 8° C, in very chilled square glasses.
Alcohol Content: 12.50%
Refinement: refinement in bottle for 3 months, before being placed on the market.
Winemaking Notes: After destemming and crushing, a soft pressing follows with a yield of 50% free-run must, the fermentation of which takes place with selected yeasts for 15 days at a controlled temperature of 13° C.
The maturation continues on its own yeasts for 5/6 months and then moves on to racking, filtration and refinement in the bottle for 3 months, before being put on the market.
Yield per hectare: yield 110 q/ha.
Harvest period: Entirely manual harvest in the last ten days of August.
Pairings Seafood and fish-based dishes, mixed salads.
Ideal as an aperitif to accompany sweet and sour and spicy dishes, such as swordfish marinated in pink pepper and orange.
Tradition: risotto with cuttlefish ink or all'isolana
