The Product in Brief:
The Pinot Noir “P” by Marco Buvoli – Opificio del Pinot Noir comes from the Pianezze vineyards in the Vicenza Hills , a cru characterized by clay and limestone soils and a cooler, breezy microclimate. These conditions allow for a slow, balanced ripening of the grapes, resulting in a Pinot Noir with great aromatic finesse and a slender structure. The grapes were hand-picked and delicately destemmed to maintain the integrity of the berry, essential for creating fruity aromas. Excellent polyphenolic ripeness allowed for extended maceration, promoting rich extraction from the skins and seeds. Fermentation takes place at a controlled temperature, with some of the bunches remaining whole and a period of maceration on the skins, which can vary from 10 to 20 days depending on the vintage. After pressing, the wine aged for approximately fifteen months in French oak tonneaux, then decanted naturally and aged in bottle for over three years, achieving a harmonious balance between fruity and spicy notes. In the glass, it presents itself as full-bodied, with elegant, silky tannins that complement aromas of red berries, aromatic spices, and nuances of roasted coffee.

Soil Characteristics: Clayey-calcareous soils, vineyards located at approximately 280 m above sea level, biodynamic management.
Color: Intense ruby red with garnet reflections.
Tasting Notes: The nose reveals ripe red and black berries, notes of wild herbs, dark spices, and subtle nuances of roasted coffee. On the palate, it is full-bodied, with elegant, silky tannins that support a harmonious, long, and persistent structure.

Alcohol Content: 13.00%
Vinification: Manual harvest in the first half of September. The grapes were carefully destemmed to preserve the integrity of the berries. Extended maceration favored rich extraction from the skins and seeds. After pressing, the wine aged for approximately 15 months in French oak tonneaux, then naturally decanted and rested in bottle for over 36 months before release.
Yield per hectare: 38 q/ha
Harvest period: September, manual with selection of the bunches.
Pairings: Red meats, game, spicy dishes, and aged cheeses. Also excellent as a meditation wine.
