Pianissimo Amarone della Valpolicella D.O.C.G.
The Product in Brief:
From the oenological mastery of the Italo Cescon family comes the Ca’ della Scala line, which combines the strength of the Valpolicella Classica territory with the grace of a music that resonates in the glass. This Amarone is born from the perfect balance of Corvina (40%), Corvinone (30%) and Rondinella (30%), grown on moderately calcareous soils that impart elegance and depth. The harvest, carried out by hand in the third week of September, is the first act of a score that continues with an appassimento (drying) period of about three months, followed by gentle pressing and a long fermentation at seasonal temperature. After malolactic fermentation, the wine matures for twenty-four months in Slavonian oak barrels of 20–50 hl, with a brief passage of five to six months in new tonneaux, before further refinement of six months in bottle. It presents itself with a deep ruby red color tending towards garnet.
On the nose it offers an intense and characteristic bouquet, with notes of ripe red fruit, dried figs and delicate balsamic and spicy hints. On the palate it is balanced and refined, with soft tannins, good freshness and sapidity, and a long fruity persistence. The alcohol content is 15%, with total acidity between 5 and 5.5 g/l and extract between 29 and 32 g/l. The yield is about 40 liters of free-run must per 100 kilograms of grapes. For optimal tasting it is recommended to serve at 20°C in a balloon glass, bringing the wine gradually to temperature. It is preferable to uncork the bottle a few hours in advance or decant it, and store it lying down in a cool place, away from light and heat sources. The aging potential is eight to ten years, during which the wine evolves while maintaining its elegance. This Amarone is the ideal companion for great roasts, game, braised meats and aged cheeses, pairs magnificently with traditional dishes such as pasta and beans or the famous Amarone risotto, and remains timeless as a meditation wine.
