Renobilis Recioto di Soave Classico D.O.C.G.
The Product in Brief:
Nobility in the berry. Renobilis 2016 is one of the rarest and most precious expressions of Garganega in Gini’s hands. Its name already holds its nature: “Re” for Recioto and “Nobilis” for the noble Botrytis cinerea, the fungus that, only when natural conditions allow, touches a few bunches, concentrating and transforming their aromatic heritage. It is born in the heart of Soave Classico, at Monteforte d’Alpone (VR), on a small plot of just 1,5 hectares, planted exclusively with Garganega. The vines, around 80 years old, stand at a density of 4.000 plants per hectare and, through careful selection, reach a yield of only 6.000 kg of grapes per hectare.Renobilis is not made every year: Gini produces it only in the most favourable vintages, when the quality of the grapes and the development of noble rot allow the particular balance the family is looking for. It is a wine in which old vines, nature, selection and time become an integral part of the result.
During the traditional drying, the berries touched by Botrytis cinerea, the prized noble rot are picked out; it can bring Garganega to extraordinary levels of concentration. Pressing yields a minimal quantity of must, extremely concentrated and viscous, which after a few days of natural settling is transferred into pièces of 228 litres. There a very slow alcoholic fermentation begins and carries on for several months. Through successive rackings the process is guided until the right balance between alcohol and residual sugar is reached. Time then takes the leading part: Renobilis goes on ageing for many long years in the same pièces, until it reaches the depth and harmony that set it apart.
In the glass it shows a captivating antique gold. The nose is intense and layered, with hints of sultanas and fruit alongside spicy nuances. On the palate it is aromatic, dense and persistent. Sweetness, concentration and depth make it a wine to be savoured slowly, at ease beside blue cheeses but equally at home on its own, as a great meditation wine.

Vinification: This very particular wine comes from a selection of berries touched by the prized noble rot during the traditional drying period. Pressing yields very little must, because of the considerable concentration and the high viscosity. The precious nectar obtained is placed, after a few days of natural settling, in pièces of 228 L. Alcoholic fermentation is extremely slow and lasts several months. A few rackings follow, to hold fermentation at the right point of balance between alcohol and residual sugar.
Ageing: For many long years Renobilis is left to age always in the same pièces, so as to reach the pleasant harmony that sets it apart.

Serving temperature: 12–14°C.
Food pairings: Blue cheeses and dishes with an intense flavour. Extraordinary on its own too, as a meditation wine at the end of a meal.
Production philosophy: Renobilis is born of the meeting between Garganega, drying, noble rot and time. A selection made only when the vintage offers ideal conditions, aged for three years in wood and produced to express one of the rarest and most precious readings of Recioto di Soave in Gini’s hands.
