Il Sogno 2018 is a surprising classic method, obtained from Manzoni Bianco and aged on the lees for 42 months. This sparkling wine is an unprecedented expression of the grape variety, with a very fine and creamy perlage, a lively acid attack and an intense minerality. A dream in all respects. Unconventional by nature and innovative by choice, this classic method does justice to the original grape variety and the vineyard it comes from.
The choice to produce it without dosage is dictated by the desire not to interfere with the seasons, free to express a different and unique nuance every year, because our zero dosage DREAM is unique, extremely elegant and decisive. The acid-savoury backbone is the soul of the entire tasting, long and broad on the palate, it unfolds with both fresh and candied fruity notes. Elegant notes of zabaglione in the aftertaste. Licorice closes the kaleidoscope of flavors of this singular Classic Method.
Crystalline, splendid straw color with green reflections, continuous and very fine effervescence. Intense mineral and citrus notes alternate with hints of toasted almond and Mediterranean spices.
Fruity notes of yellow peach and candied fruit follow. The care we put into the vineyard is meticulous: we reduce the use of machinery and pesticides to a minimum, preferring manual work that respects the balance of the soil and favors the presence of wild microfauna. In the cellar, once the grapes have been pressed, all the marc is recovered to be transformed into compost, which will become a beneficial organic biofertilizer for our vineyards.
The harvest is completely manual, ensuring that each bunch arrives at the cellar intact, ready for a delicate pressing that preserves the purity of the must.

Land Characteristics: Our vineyards are located in the designated ASOLO DOCG area and are situated on the steepest slopes of the Asolo hills.
The Colli Asolani area has a clayey soil on which mostly rest “calcareous marl”, that is, rocks sedimented over the centuries and mainly made up of limestone mixed with thinner clayey and pebbly material, called “sandstone rock”.
