Il Sogno Riserva 2016 is a surprising classic method, obtained from Manzoni Bianco and refined on the lees for 72 months, only 310 bottles were produced. This sparkling wine is an unprecedented expression of the grape variety, with a very fine and creamy perlage, a lively acid attack and an intense minerality.
In the mouth you can perceive hints of almond, bread crust, grapefruit and peach, making it perfect for bold gastronomic pairings such as grilled shellfish, beef tartare or veal with tuna sauce. The choice to produce a reserve version with over 72 months of aging on the lees was the awareness of the power of this wonderful classic method. Staying true to the zero dosage was easy because the wine reached its balance during its long maturation in the bottle.

The few bottles produced (only 310 of 0.75 lt. 
and 40 magnums) are the sign of exclusivity that the winery wanted to give to this personal version of the Sogno Dosaggio zero. The care we put into the vineyard is meticulous: we reduce the use of machinery and pesticides to a minimum, preferring manual work that respects the balance of the soil and favors the presence of wild microfauna. In the cellar, once the grapes have been pressed, all the marc is recovered to be transformed into compost, which will become a beneficial organic biofertilizer for our vineyards. The harvest is completely manual, ensuring that each bunch arrives at the cellar intact, ready for a delicate pressing that preserves the purity of the must.

Crystalline, splendid straw-yellow colour with sparkling gold reflections, continuous and very fine effervescence.The crunchy notes of yeast and the intense flavour with mineral and citrus notes alternate with hints of toasted almond and Mediterranean spices. Fruity notes of candied citrus follow. Extremely elegant, decisive and enveloping.The acid-savoury backbone is the soul of the whole tasting, long and broad on the palate it unfolds with both fresh and candied fruity notes. In the aftertaste, elegant notes of zabaglione and licorice close the kaleidoscope of flavours of this unique sparkling wine.It is a rather broad sip, with a calibrated evolution of tertiary aromas that tell of the oxidation of a great Classic Method. It closes long with smoky hints.

Land Characteristics: Our vineyards are located in the designated ASOLO DOCG area and are situated on the steepest slopes of the Asolo hills. The Colli Asolani area features clayey soil on which mostly “calcareous marl” rests, that is, rocks sedimented over the centuries and mainly made up of limestone mixed with thinner clayey and pebbly material, called “sandstone rock”.

Tasting notes: Crystalline, splendid straw-yellow colour with sparkling gold reflections, continuous and very fine effervescence.
The crunchy notes of yeast and the intense flavour with mineral and citrus notes alternate with hints of toasted almond and Mediterranean spices. Fruity notes of candied citrus follow.

Thanks to advanced technologies, such as our carbon dioxide management system during fermentation, we are able to reduce the use of sulfites, maintaining high quality standards and certifying this commitment in our bottles. Even the pomace is not wasted: we transform it into compost to nourish the vineyards, in a virtuous cycle that respects nature. Our grapes, particularly the Glera, find their ideal habitat here. The Asolo hills, with their unique microclimate, are perfect for the production of Prosecco Asolo DOCG, a wine that embodies the tradition and uniqueness of this land. Native varieties, such as Bianchetta, Perera, and Verdiso, further enrich our offering, expressing the diversity and richness of our terroir. Manzoni Bianco, born from the studies of Professor Luigi Manzoni, is another grape variety we proudly cultivate. Thanks to its versatility, it allows us to produce wines with unique aromatic and flavor characteristics, capable of surprising even the most discerning palates.
