Breganze Cabernet DOC
The Product in Brief:
A Cabernet with a strong territorial identity, the result of a refined blend: 50% Cabernet Franc and 50% Cabernet Sauvignon, grown on the volcanic hills of Colle Santa Lucia in Breganze.
An intense and structured wine, which expresses all the richness and elegance of the Breganze DOC denomination.
The two vines are harvested separately when perfectly ripe and left to dry for 15 days, concentrating aromas and structure.
After an 11-day maceration with frequent punching down and pumping over, the wine ages in stainless steel with fine lees and in second passage barriques for 6-12 months, before being assembled without aggressive filtration, maintaining its complexity intact.
With an intense ruby color, this Cabernet opens to the nose with aromas of small red fruits, followed by light spicy notes.
In the mouth it is dry, full-bodied and enveloping, with silky tannins and a long persistence.
A wine with great evolutionary potential, which can be refined in the bottle for 5-6 years.
It pairs perfectly with braised meats, tasty red meats, roast kid and mature cheeses, thanks to its structure and aromatic complexity.
To appreciate it at its best, we recommend serving it at 16°-18°C.
An authentic expression of the Breganze terroir, capable of combining the power of Cabernet Sauvignon with the elegance of Cabernet Franc, in a perfect balance that tells the story and tradition of the Firmino Miotti winery.
Grape variety: 50% Cabernet Sauvignon, 50% Cabernet Franc.
Production area: Colle di Santa Lucia in Breganze, in the Vicenza foothills.
Land characteristics: Volcanic soil, upside-down guyot training system, yield 60 q/ha.

Serving temperature: Temperature of 16/18° C, in square glasses, it is recommended to remove it from the storage place one day before to gradually bring it to temperature.
Alcohol Content: 14.50%
Refinement: After racking, maturation continues in oak barrels for 12 months, enriched by a further 12 months of bottle refinement before being placed on the market.
Winemaking Notes: After destemming, a pre-fermentative maceration begins, carried out at cold temperatures for 4/5 days.
Once this first phase is completed, the traditional maceration follows with subsequent completion of the alcoholic and malolactic fermentation for 20 days.
Yield per hectare: 60 q/ha.
Harvest period: last ten days of September, manual harvest.
