The Product in Brief:
Dama del Rovere's Brut Nature represents the most essential and radical expression of Durella, interpreted using the Metodo Classico. It originates on the volcanic hills of Roncà, in the heart of eastern Lessinia, in the province of Verona, one of the most suitable territories for cultivating this indigenous grape variety, naturally rich in savouriness, acidity, and mineral salts. The vineyard is located in Brenton at approximately 450 meters above sea level and comes from a historic planting in 1968, trained with a simple pergola, known as "pergola trentina". Here, the volcanic soils and significant temperature excursions between day and night favour slow and complete ripening, preserving freshness, aromatic integrity, and mineral tension. At the heart of Dama del Rovere's Metodo Classico sparkling wines is the patient work of Massimo Prà, who for years has built his base wines with great precision and a long-term vision. Part of the wines are set aside as vin de réserve, stored season after season and then used in the blends to provide stylistic continuity, depth, and recognition to the different cuvées.
This work is now structured as a true perpetuelle: a dynamic reserve where small quantities of wines from previous vintages are kept alive and progressively integrated into subsequent blends, helping to build depth, stylistic continuity, and vineyard memory over time. This approach has also been refined thanks to significant professional experience in Burgundy, where the culture of blending, precision, and patience is an integral part of their production identity. After manual harvesting between late August and mid-September, vinification takes place in stainless steel tanks; the wine is then bottled and left to age on its lees for at least 60 months. The result is a Metodo Classico Brut Nature sparkling wine of great purity and verticality, where Durella expresses itself without any dosage, highlighting all its mineral tension, aromatic depth, and evolutionary capacity.
